Meal Planning Made Simple | Just add chicken
Did everyone on my American side have a fabulous Fourth of July weekend? We went to the mountains with my in-laws and it was such a relaxing time. Matt's parents and grandparents both have cabins right by each other off the Blue Ridge Parkway in Virginia. It's so awesome to see Wells and Tagg get to have such a good relationship with their out of town family. I think I'm the one who gets the best vacation though. I pretty much get to lay around eating and reading all day, which is why I'm always so quick to make the trip!
I've mentioned before that I'm a big fan of rotisserie chicken. It's just so easy to make dinner when main ingredient is already cooked for you. Before we moved last year that was pretty much the only meat we ate. But our closest grocery store doesn't have the best looking birds so I drive to a different grocery store once a week and try to load up on organic chicken breasts and a rotisserie while I'm there. I now almost always bake double what I need for a night so we always have some leftovers to make dinner easier on the second night.
I thought I'd round up some of my favorite things to do with baked or grilled chicken in the summer. All of these recipes are just as good, if not better, with leftover chicken. I've tried all of them time and again with different seasoned chicken and it always turns out good. I actually suggest using these as your standard next day dinner recipes. If you do a baked chicken with your favorite sides one night, make one of these the next night!
