Coconut Cupcakes

I Love Love Coconut!

The boy's and I made some coconut cupcakes for our Easter dessert. They turned out pretty tasty and so I wanted to share the recipe with you all today.

Coconut Cupcakes

half cup butter, softened

1 cup sugar

1 egg

1 egg white

half of tsp vanilla

1 cup coconut milk

1 1/four cup flour

1 cup shredded coconut

half tsp baking powder

1/2 tsp baking soda

1/four tsp salt

In a medium bowl integrate the flour, baking soda, baking powder, and salt. In a separate bowl, cream the butter and sugar. Beat within the egg and egg white. Add the vanilla, and coconut. Mix properly. Add within the flour aggregate alternating with the coconut milk.

Fill paper-lined muffin cups with 1/4 cup of batter.

Bake at 350 for 25-half-hour or until a toothpick inserted near the center comes out clean.

Makes 12 cupcakes

Coconut Frosting

half of stick butter, softened

half of tsp vanilla

1 half of cups powdered sugar

2 tbs coconut milk

Beat all substances together till creamy.

Coconut Topping

Toast 1 cup of coconut in fry pan over medium heat, stir constantly until lightly brown.  Let cool, then sprinkle toasted coconut onto cupcakes
