Breakfast Quesadilla

I have a brand new each day ritual that I now stay up for normal, it's known as breakfast!

That may also sound silly, but I in no way simply ate breakfast before, and now I simply experience making it and eating it at the same time as being completely present within the moment.

After I drop my son off at college, I come home to a peaceful and quiet domestic and I start to prepare myself breakfast, typically it's eggs and toast, but however, ordinary I make it a bit special, adding distinct elements to it, like cheeses, greens, and salsas and/or jams, and each day it taste scrumptious!

I set my region setting with a tall glass of water, a clean cup of espresso, napkin and utensils.

I sit down and say a little prayer of gratitude and then I stay present as I eat.  I focus on the food, on the taste, the smell, and I enjoy every last bite.  I focus on the quiet of the room. I may stop to look out the window at the morning sun shining in, but I do not let myself get distracted with my phone or  think about my to-do list and what I need to do next.  And you know what?  That is the whole reason why I love breakfast now.  I am totally in tune with it. It's a moment of peace that I allow myself to have each morning.

Anyhow, the alternative day I made myself a Breakfast Quesadilla. Have you ever had a Breakfast Quesadilla earlier than? I never had, it was simply something I prepare in my morning bliss and it turned out to be scrumptious, so scrumptious in reality, I took snap shots of it in order that I could percentage it with you.

First, I scrambled up eggs with salt and pepper.

Meanwhile, in a larger separate pan that become gently sprayed with cooking oil, I positioned down a massive tortilla and piled it with shredded cheddar cheese (Tillamook is the Best!).

Once my eggs had been 1/2 way cooked, I introduced in a handful of toddler spinach.

As soon as the cheese became melted at the tortilla, and the eggs were fully cooked, I transferred the eggs to the tortilla. Added a second tortilla on pinnacle and punctiliously flipped it over.

I don't know why I'm explaining this in so much element ?? I'm sure you already know the way to make a freaking quesadilla. Ha Ha, but Anyway.

Cut the quesadilla into triangles, upload salsa and/or guacamole and ENJOY!

Now here I made it pretty simple with just egg and spinach, but obviously you could add lots of other ingredients to it too.  Perhaps mushrooms & Swiss or cut up meats, like ham, sausage, or beacon.

I actually made this for my husband one night and I added beacon to it. However, when you add extra ingredients, it makes for a larger quesadilla, which makes it a bit harder to stay together and messier to eat. So if you do add more ingredient, maybe stick to only one egg.

And I also suggest that if you do make this,  be present while you prepare it and be present while you eat it, and enjoy every last bite of it. And trust me, this will make it even more satisfying :)
