This Low Carb Taco Casserole is super easy to make. Start with browning some ground beef or ground turkey. Drain the fat, add a packet of taco seasoning and a can of diced tomatoes and green chiles. Let that cook for a few minutes and transfer to a baking dish. Top the taco meat with some cheese. Next, whisk together some eggs, sour cream, and heavy cream. Pour the egg mixture over the taco meat and bake.This taco casserole would be great with some fresh onion and bell peppers. I suggest adding the onion and peppers to the ground beef and let them soften while the beef cooks. I used shredded cheddar cheese. Feel free to swap it for any cheese you prefer - pepper jack, white cheddar, Monterey jack.

You can make this Low-Carb Taco Casserole in advance and refrigerate overnight or freeze for later. To bake after freezing, thaw completely in the refrigerator and bake as directed below.
