VEGAN PANCAKES
Matthew perfected the best recipe for vegan pancakes this past weekend. It was such an awesome treat that even the allergy kids could enjoy and we've made this twice since then. Even if you aren't vegan, which we're really not, we just have food allergies that eliminate the use of egg and dairy, this is an amazing and clean recipe. I love eliminating processed foods where we can. I promise once you try this recipe you will never buy store bought mix again. For real. And y'all know if I can do it, then you can do it.
It's such an easy activity for the kids to help with and I love that it's safe for them to eat. I especially love sharing a meal together that we can all make and eat without calling any extra attention to special dietary restrictions like we usually do. This recipe is egg, nut, dairy, rice, and corn free. Probably free of lots of other things too, but you'll have to check into that for your own allergy.
We sprinkled powder sugar and syrup on top. Amazing!
VEGAN PANCAKES:
2 cup flour
four Tbsp baking powder
2 tsp sugar
2 pinches of salt
Mix dry components together
4 Tbsp vegetable oil
2 cups of soy milk
2 tsp vanilla extract
Mix into the bowl of dry ingredients
Vegan Buttery Spread
to gently coat your warm pan
