Gorgonzola Gnocci with Spinach and Chicken
Saturday, 9 May 2020
Y'all, I actually have a deal with for you nowadays; a short and engaging recipe that tastes a lot more complex than it's far - Gorgonzola Gnocci. There is nothing wholesome about this recipe but every now and then you need a few hearty consolation meals!
INGREDIENTS
- GNOCCI
- GORGONZOLA CHEESE
- FRESH SPINACH
- BUTTER
- HEAVY CREAM
- CHICKEN
- GRANNY SMITH APPLE
- WHITE WINE (or whatever you have, I used Rosé because it was already open)
- SALT
DIRECTIONS
Cook Gnocci according to directions on the package. Don't over cook, it literally takes like 2-3 minutes and they will begin to float to the top.In a sauce pan, melt 1 tbsp of butter over medium heat and add in enough fresh spinach to fill the pan. Sprinkle with salt and let simmer for a few minutes. Add in cooked shredded chicken. Pour a 1/4 cup of white wine and simmer for another 2-3 minutes. Slowly stir in a 1/4 cup of gorgonzola cheese. Continue stirring until the cheese melts. Lower the temperature to low and slowly stir in 1/2 cup cream. Add in the gnocci and serve!
- I added diced granny smith apples to mine because I love the crunch and sour flavor with the gorgonzola.
- Bacon crumbles are also amazing with this recipe, just add them to the top before serving.
