Chewy, Crispy, Banana Coconut Chocolate Chip Cookies

My Favorite Go-To Ingredients are Coconut and Golden Raisins.

I put them in Everything from Salads, Rice, Cookies, Oatmeal, Muffins to sometimes even eggs.

Yes, even eggs! Does that sound strange?

They make everything taste Sweeter. You should give it a try.

Chewy Crispy Banana Coconut Chocolate Chip Cookies

Ingredients:

1/2 cup butter

1/2 cup packed brown sugar

1/2 cup white sugar

1 egg

1 tsp vanilla

1 cup all purpose flour

1/2 cup crushed cornflakes cereal

1 cup rolled oats

1 tsp baking soda

1/2 tsp salt

1/2 tsp baking powder

1 cup flaked coconut

1 cup chocolate chips

1/4 cup golden raisins

1/2 cup banana (one banana)

  1. Preheat oven to 350 degrees

  • In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Stir in the egg, vanilla and banana. Sift together the flour, baking soda, salt, and baking powder, stir into the creamed mixture. Add the oatmeal, crushed cereal, coconut, raisins and chocolate chips and mix until combined.
  • Drop dough by tablespoonfuls onto a cookie sheet. cookies should be about 3 inches apart. Bake for 12 minutes. until light brown.
  • Makes 3 dozen

    Note: there is so much going on in these cookies that if you don't have one of the ingredients, Don't worry about it. I think the original recipe didn't have the banana, chocolate chips or raisins in them. I just make the recipe up as I go along. I think they would also be great with nuts or sunflower seeds.
