As I said, this Hawaiian Banana Nut Bread is super easy to make. It doesn't even require a mixer! All you need is a bowl and a whisk. Start with combining mashed bananas, eggs, canola oil, vanilla extract, coconut extract, and crushed pineapple. Next, you will add in all of the dry ingredients - flour, sugar, baking soda, salt, cinnamon, pecans, and coconut. Pour the batter into two loaf pans. Top the batter with some turbinado sugar and bake. The sugar gives the bread a nice crunch after it is baked.Check the bread while it is baking and tent it with foil during the last 15 minutes if it is starting to get too brown. Feel free to swap the pecans for walnuts or macadamia nuts. You can also make the bread in smaller loaf pans. The smaller loaves are perfect for gifts!
